@ai6yr In this economy, people are complaining about extra protein. Sheesh, some people. With their demands for food safety, and not dying from pickled peppers.

my folks were on a tour in asia and were told "we have a simple rule. if it moves, it's protein."

yup. put it in some broth with a thick roux and cajun seasonings and you really never know what the chunks are.

I am literally an ocean away from gumbo… and Cajun restaurants are nonexistant over here. So I'd be curious about your recipes and about your personal takes on what makes a good gumbo: Like 'you can't use too much herb x' or 'better use syrup than sugar' or... ;)

one trick i struggled with was getting a sufficiently dark roux. you want it to be dark, like antique mahogany furniture. you'll get to caramel color and it starts to bubble and get very rough and grainy. keep stirring and keep going. it will smooth back out. i always chickened out when it got to the grainy stage until i took a roux class in new orleans.

you will hear debate about tomato. i prefer it without tomato.

if you can get andouille sausage, great. otherwise, see which catalan sausages you can get with a decent amount of fat, made from pork, spicy, with garlic.

i do my cajun seasoning myself from emeril lagasse's recipe, since i find most commercial seasonings too heavy on salt.

if your okra isn't the best, definitely get some gumbo file powder.

once you've gotten roux dark, the holy trinity in (onion, celery, green pepper) and you've let the broth hit light boil so that the roux thickens correctly, drop the temp low. long slow simmer is how you get a good gumbo.

this is like the great "is there onion in a tortilla espanola" debate. :)

if your mom put in onion, it's correct. if your mom didn't, it's wrong. (i like it with onion).

lots of debate about tomato in gumbo, i've heard about okra but that seems to be less of a debate.

personally, i like it without tomato and with okra, so that's my version. but i respect everyone's "my mom did or didn't". i learned early not to debate my mom on certain things too. :)

@paul_ipv6 The whole thing is hilarious. You should listen to people down here discuss what goes into West Indies salad. There are only THREE ingredients! @musevg @astronot @jack_daniel @MissConstrue @ai6yr
